A rich and comforting soup made with shredded rotisserie chicken and fresh mushrooms, perfect for a quick and satisfying meal.

  • 1 piece rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 piece onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 tbsp butter
  • to taste Salt and pepper

Instructions 

  • Melt butter in a large pot over medium heat.
  • Sauté onion and garlic until fragrant, then add mushrooms and cook until tender.
  • Pour in chicken broth, bring to a simmer, then add shredded chicken and cook for 10 minutes.
  • Stir in heavy cream gradually, season with salt and pepper, and simmer for 10 minutes.

Notes

For a thicker soup, blend a portion before adding cream.
