A quick and creamy pasta dish featuring tender rotisserie chicken and fresh spinach, perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 2 cups shredded rotisserie chicken

Pasta

  • 8 oz pasta (penne or fettuccine)

Dairy

  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Vegetables

  • 2 cups fresh spinach

Other

  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil

Seasonings

  • to taste Salt and pepper

Instructions 

  • Cook pasta until al dente, then drain and set aside.
  • Heat olive oil in a skillet and sauté garlic for one minute.
  • Add heavy cream and chicken broth; simmer for five minutes.
  • Stir in chicken and spinach; cook until spinach wilts.
  • Combine pasta with sauce, season, and serve with Parmesan.

Notes

For extra flavor, sprinkle additional Parmesan or add red pepper flakes.
