Creamy Smothered Chicken and Rice

A comforting dish featuring tender chicken smothered in a creamy sauce served over flavorful rice. Perfect for a hearty, satisfying meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (or 4 chicken thighs)
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Seasonings

  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ small onion, diced (about 25g)
  • 3 cloves garlic, minced

Liquids & Dairy

  • 1 cup chicken broth
  • ½ cup heavy cream (or half-and-half)
  • ¼ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Rice & Broth

  • 1 cup white or brown rice
  • 2 cups chicken broth or water
  • ½ teaspoon salt
  • 2 tablespoons chopped fresh parsley

Extras

  • to taste Extra Parmesan cheese

Instructions 

  • Cook rice in broth with salt until tender, then fluff and set aside.
  • Season chicken with spices. Sear in oil and butter until golden, then remove.
  • In the same pan, melt butter, sauté onions and garlic, then add broth, cream, cheese, and seasonings. Simmer until thickened.
  • Return chicken to pan, spoon sauce over, cover, and simmer until cooked through.
  • Serve chicken and sauce over rice, garnish with parsley and extra Parmesan if desired.

Notes

For a richer flavor, use homemade chicken broth and freshly grated Parmesan.
