  • 3 cups Cooked and Shredded Chicken (using rotisserie chicken saves time)
  • 3 cups Corn (fresh, frozen, or canned)
  • 1 piece Jalapeño (remove seeds for less heat)
  • 0.5 cup Red Onion (adds sweetness and crunch)
  • 1 cup Mayonnaise (creamy foundation)
  • 0.5 cup Sour Cream or Greek Yogurt (adds richness)
  • 1 cup Cotija Cheese (salty, tangy flavor)
  • 2 tbsp Lime Juice (brightens flavors)
  • 2 tsp Chili Powder (adds warmth)
  • 1 tsp Smoked Paprika (smokiness)
  • 1 tsp Garlic Powder (savory note)
  • 1.5 cups Monterey Jack Cheese (melty topping)
  • 0.25 cup Fresh Cilantro (freshness and color)

Instructions 

  • Preheat oven to 375°F (190°C). Mix chicken, corn, jalapeño, red onion, mayonnaise, sour cream, lime juice, chili powder, paprika, and garlic powder in a bowl.
  • Transfer mixture to a baking dish and top with shredded Monterey Jack cheese and crumbled Cotija cheese.
  • Bake for 25-30 minutes until bubbly and golden.
  • Garnish with chopped cilantro before serving.

Notes

For extra flavor, add a squeeze of fresh lime before serving.
