Instructions
Slice chicken in half lengthwise, season with salt, pepper, Italian seasoning, and paprika.
Heat olive oil, sear chicken 4-5 minutes per side until golden, then set aside.
Melt butter, sauté garlic 30 seconds, add cream and broth, stir in parmesan, onion powder, and red pepper flakes; simmer 3-4 minutes.
Stir in sun-dried tomatoes, then add spinach until wilted. Return chicken to skillet, simmer 5 minutes.
Garnish with parsley and serve immediately over pasta, rice, or bread.
Notes
For a spicier kick, add more red pepper flakes or serve with a side of crusty bread to soak up the sauce.
