Ingredients

Protein

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes (optional) (for spice)
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions 

  • Slice chicken in half lengthwise, season with salt, pepper, Italian seasoning, and paprika.
  • Heat olive oil, sear chicken 4-5 minutes per side until golden, then set aside.
  • Melt butter, sauté garlic 30 seconds, add cream and broth, stir in parmesan, onion powder, and red pepper flakes; simmer 3-4 minutes.
  • Stir in sun-dried tomatoes, then add spinach until wilted. Return chicken to skillet, simmer 5 minutes.
  • Garnish with parsley and serve immediately over pasta, rice, or bread.

Notes

For a spicier kick, add more red pepper flakes or serve with a side of crusty bread to soak up the sauce.
