Ingredients

Pasta

  • 12 oz pasta (fettuccine or penne)

Protein

  • 2 pieces boneless, skinless chicken breasts (diced)

Oils and Seasonings

  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)

Sun-Dried Tomatoes

  • 1 cup sun-dried tomatoes (chopped)

Seasonings

  • 1 teaspoon Italian seasoning

Dairy and Broth

  • 1 cup heavy cream
  • 1 cup chicken broth

Vegetables

  • 2 cups fresh spinach

Salt and Pepper

Cheese

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • In a large pan, heat olive oil and cook diced chicken until golden and cooked through, about 5-7 minutes.
  • Add minced garlic and chopped sun-dried tomatoes; sauté for 2 minutes.
  • Pour in heavy cream, chicken broth, and Italian seasoning; simmer gently.
  • Stir in spinach until wilted, then add cooked pasta and toss to coat.
  • Serve topped with grated Parmesan cheese.

Notes

Use fresh spinach for best flavor, and adjust seasoning to taste.
