A rich and flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and spinach in a creamy Parmesan sauce.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts

Pasta

  • 12 oz rigatoni or penne pasta

Vegetables & Dairy

  • 1.5 cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes (drained and sliced)
  • 3 cups fresh spinach

Aromatics & Oils

  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)

Instructions 

  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil and sear chicken until cooked; set aside.
  • Sauté garlic, add sun-dried tomatoes, then pour in cream and simmer. Stir in Parmesan until thickened.
  • Add spinach, cook until wilted, then slice chicken and return to pan.
  • Cook pasta separately, drain, and toss with sauce. Garnish and serve hot.

Notes

For extra flavor, top with additional Parmesan or fresh parsley.
