A rich and flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and spinach in a creamy sauce.

Ingredients

Protein

  • 2 pounds chicken breasts (boneless and skinless)
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (drained, roughly chopped)
  • 1 tablespoon Italian seasoning
  • 1 cup heavy cream
  • 2 cups milk
  • 1 cup freshly grated Parmesan cheese
  • 8 ounces penne pasta (uncooked)
  • 3 cups baby spinach

Instructions 

  • Season chicken with salt and pepper. Cook in oil until browned, then remove and chop.
  • Melt butter, sauté garlic, sun-dried tomatoes, and Italian seasoning for 1-2 minutes.
  • Add cream, milk, Parmesan, and pasta. Cook 10 minutes until al dente and sauce thickens.
  • Return chicken and spinach; cook 1-2 minutes until heated and wilted.
  • Serve immediately, garnished as desired.

Notes

For a lighter version, use half-and-half instead of heavy cream.
