Ingredients

Protein

  • 1.5 lbs chicken breasts, sliced thin
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil

Pasta

  • 12 oz pasta (penne or fettuccine)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1.5 cups heavy cream
  • 0.5 cup sun-dried tomatoes, chopped
  • 1 cup grated parmesan cheese
  • 2 tsp Italian seasoning
  • 3 cups fresh spinach

Seasoning

Instructions 

  • Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  • Cook pasta until al dente; save 1 cup pasta water.
  • Heat olive oil; sear chicken 4-5 minutes per side; set aside.
  • In same pan, add butter and garlic; cook 30 seconds. Add sun-dried tomatoes, cook 1 minute.
  • Pour in broth, simmer 2-3 minutes; add cream and Italian seasoning, simmer 3-4 minutes. Stir in parmesan, add spinach until wilted.
  • Toss pasta with sauce, slice chicken, and combine. Adjust with pasta water if needed; serve immediately.

Notes

Use freshly grated parmesan for best flavor.
