Instructions
Cook pasta until al dente, reserve ½ cup pasta water, then drain and rinse with cold water.
Season chicken thoroughly, cook in oil until seared (~3-4 min per side), rest, then slice into strips.
In the same pan, melt butter, sauté garlic, add sun-dried and cherry tomatoes, cook 5 min, then stir in seasonings.
Add milk and cream, bring to boil, stir in parmesan and reserved pasta water, cook until sauce thickens slightly.
Turn off heat, stir in spinach and basil, then add cooked chicken and pasta, toss to combine, serve garnished with basil, parmesan, and tomatoes.
Notes
Use fresh basil and high-quality parmesan for best flavor.
