Creamy Tuscan Chicken Pasta with Sun-Dried Tomatoes and Spinach

A rich and flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach in a creamy sauce.

Ingredients

Pasta

  • 0.5 pack Linguini pasta (½ lb or 225g)
  • 1 tbsp salt
  • 1 tbsp oil

Chicken

  • 0.5 lb chicken tenders (3-4 tenders or can use chicken breast)
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp cayenne
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning

Tuscan sauce

  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2-3 cloves garlic (chopped)
  • 3 tbsp sundried tomato (from a jar, crushed or chopped)
  • 8 cherry tomatoes cherry tomatoes (roughly chopped)
  • 1.5 cups milk (360g)
  • 0.5 cup cream (120g)
  • 0.75 cup grated parmesan (plus more for garnish)
  • 0.5 cup reserved pasta water

Vegetables & herbs

  • 1 handful spinach leaves (chopped)
  • 3-4 leaves basil (chopped (+ more for garnish))

Instructions 

  • Cook pasta until al dente, reserve ½ cup pasta water, then drain and rinse with cold water.
  • Season chicken thoroughly, cook in oil until seared (~3-4 min per side), rest, then slice into strips.
  • In the same pan, melt butter, sauté garlic, add sun-dried and cherry tomatoes, cook 5 min, then stir in seasonings.
  • Add milk and cream, bring to boil, stir in parmesan and reserved pasta water, cook until sauce thickens slightly.
  • Turn off heat, stir in spinach and basil, then add cooked chicken and pasta, toss to combine, serve garnished with basil, parmesan, and tomatoes.

Notes

Use fresh basil and high-quality parmesan for best flavor.
