Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste Salt and black pepper
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup chicken broth
  • 1 teaspoon Italian seasoning

Instructions 

  • Season chicken with salt and pepper. Heat oil in a skillet and sear chicken until golden and cooked through, about 4-6 minutes per side. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant, then add sun-dried tomatoes and spinach, cooking until spinach wilts.
  • Pour in chicken broth, scraping up browned bits, then stir in heavy cream and Parmesan cheese. Simmer until sauce thickens.
  • Return chicken to the skillet, spoon sauce over, and cook until heated through. Serve hot with preferred sides.

Notes

For a lighter option, use half-and-half instead of heavy cream.
