A rich and flavorful dish featuring seared salmon in a creamy tomato and basil sauce, perfect for a quick and elegant meal.

Ingredients

Salmon

  • 2 tablespoons olive oil
  • 4 ounces salmon fillets (Four fillets)
  • 1 teaspoon kosher salt (for the salmon (plus more))
  • 1/2 teaspoon black pepper (plus more)
  • 2 tablespoons butter
  • 6 cloves garlic (smashed and minced)
  • 18 ounces cherry tomatoes
  • 1 cup heavy cream
  • 1 1/2 teaspoons kosher salt (for the sauce)
  • 1 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup parmesan cheese (shredded)
  • 3-4 ounces spinach (chopped)
  • 1/2 bunch fresh basil (roughly chopped)

Instructions 

  • Pat salmon dry, season with salt and pepper. Sear in hot oil 1-3 minutes per side until browned. Remove and keep warm.
  • In the same pan, melt butter, cook garlic 1 minute. Add chopped and whole cherry tomatoes, cook 1 minute.
  • Pour in heavy cream, add salt, basil, cayenne, and black pepper. Simmer 2-4 minutes until slightly thickened.
  • Stir in Parmesan, spinach, and chopped basil. Return salmon to pan, heat through. Serve with your choice of sides.

Notes

Serve with pasta, rice, or a green salad for a complete meal.
