salmon fillets

(smashed and minced)

cherry tomatoes

heavy cream

Instructions
Pat salmon dry, season with salt and pepper. Sear in hot oil 1-3 minutes per side until browned. Remove and keep warm.
In the same pan, melt butter, cook garlic 1 minute. Add chopped and whole cherry tomatoes, cook 1 minute.
Pour in heavy cream, add salt, basil, cayenne, and black pepper. Simmer 2-4 minutes until slightly thickened.
Stir in Parmesan, spinach, and chopped basil. Return salmon to pan, heat through. Serve with your choice of sides.
Notes
Serve with pasta, rice, or a green salad for a complete meal.
