Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic; cook until translucent, about 5 minutes.
Stir in mushrooms; sauté until tender, 5-7 minutes.
Add chicken and cook until lightly browned, 5-7 minutes.
Mix in thyme, parsley, salt, and pepper. Add rice and broth; bring to boil.
Simmer covered for 30-40 minutes until rice is tender. Stir in cream and greens if using; heat through.
Notes
Adjust seasoning to taste and garnish with fresh parsley if desired.
