A comforting and hearty soup combining tender chicken, wild rice, and vegetables in a creamy broth, perfect for cozy meals.

Ingredients

olive oil

  • 1 tablespoon olive oil

vegetables

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced (button or cremini)

chicken

  • 1 pound boneless, skinless chicken breasts, cubed

spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

grain

  • 1 cup wild rice, rinsed

liquid

  • 6 cups chicken broth
  • 1 cup heavy cream

greens (optional)

  • 1 cup fresh spinach or kale (optional)

garnish (optional)

  • Fresh parsley for garnish (optional)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic; cook until translucent, about 5 minutes.
  • Stir in mushrooms; sauté until tender, 5-7 minutes.
  • Add chicken and cook until lightly browned, 5-7 minutes.
  • Mix in thyme, parsley, salt, and pepper. Add rice and broth; bring to boil.
  • Simmer covered for 30-40 minutes until rice is tender. Stir in cream and greens if using; heat through.

Notes

Adjust seasoning to taste and garnish with fresh parsley if desired.
