Instructions
Melt butter in a large pot, cook diced vegetables for 4 minutes, then add garlic and cook 1 minute.
Add herbs, soy sauce, hot sauce, chicken, and 5 cups broth; simmer for 20 minutes. Shred chicken and return to soup.
Cook rice in 1.5 cups broth for 15 minutes, then let sit covered for 10 minutes.
Taste and adjust salt if needed. Serve soup over rice, garnished with parsley.
