Ingredients

Spices and herbs

  • 1 teaspoon dried basil
  • 0.5 teaspoon dried parsley
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon mustard powder
  • 0.25 teaspoon pepper
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 0.5 cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce (e.g., Frank's)
  • 1.25 pounds bone-in chicken breast

Fresh parsley, for garnish

  • 1.5 cups chicken broth
  • 0.75 cup white long grain rice, uncooked ((or 2 ΒΌ cups cooked rice))

Instructions 

  • Melt butter in a large pot, cook diced vegetables for 4 minutes, then add garlic and cook 1 minute.
  • Add herbs, soy sauce, hot sauce, chicken, and 5 cups broth; simmer for 20 minutes. Shred chicken and return to soup.
  • Cook rice in 1.5 cups broth for 15 minutes, then let sit covered for 10 minutes.
  • Taste and adjust salt if needed. Serve soup over rice, garnished with parsley.

Notes

For extra flavor, use homemade chicken broth and fresh herbs.
