Instructions
Season chicken cutlets with salt, pepper, garlic powder, and cayenne pepper. Dredge in corn starch.
Heat oil in a skillet and fry chicken until golden and cooked through, about 4-5 minutes per side.
Prepare slaw by mixing cabbage, apple, honey, Greek yogurt, mustard, and vinegar. Season with salt and pepper to taste.

Notes
For extra crunch, double coat the chicken in corn starch and fry twice.
