Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken thighs
  • 2 pieces chipotle peppers in adobo, finely chopped
  • 3 cloves garlic, minced
  • 1 piece lime, juiced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin

Tortillas

  • 8 small corn tortillas

Toppings

  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.5 cup sour cream
  • 1 teaspoon salt

Garnish

  • Chopped fresh cilantro cilantro, for garnish

Instructions 

  • Marinate chicken with chipotle, garlic, lime juice, paprika, cumin, and salt for 20 minutes.
  • Cook chicken in a hot skillet until golden and cooked through, then chop.
  • Warm tortillas until slightly charred.
  • Assemble tacos with sour cream, chicken, lettuce, tomatoes, and cilantro.
  • Serve warm with lime wedges and extra sour cream if desired.

Notes

For extra flavor, toast the tortillas over an open flame for a smoky touch.
