Chicken

  • 1.5 lb chicken tenders
  • 1 cup buttermilk
  • 1 large egg
  • 1.5 cups all-purpose flour
  • 0.25 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1.25 tsp kosher salt ((divided))
  • 0.5 tsp black pepper
  • 3 cups neutral oil ((canola or peanut))
  • 0.25 tsp cayenne pepper ((for heat))
  • 0.5 tsp dried oregano ((for herby flavor))

Instructions 

  • Whisk buttermilk, egg, and ¼ tsp salt. Add chicken and soak for 15 minutes.
  • Mix flour, cornstarch, garlic powder, onion powder, paprika, remaining salt, and pepper in a shallow bowl.
  • Heat oil to 350°F (175°C) in a deep skillet.
  • Dredge chicken: dip each tender in flour mix, then in buttermilk, then in flour again. Set aside on a rack.
  • Fry tenders in batches for 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Drain on paper towels.
