  • 4 pieces bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • 4 tablespoons unsalted butter (melted (about 57 grams))
  • 4 cloves garlic (minced fresh)
  • 0.5 cup finely grated Parmesan cheese (about 50 grams)
  • 1 teaspoon Italian seasoning (dried basil, oregano, thyme blend)
  • 1 teaspoon paprika
  • to taste Salt and freshly cracked black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Instructions 

  • Preheat oven to 425°F (220°C). Pat chicken dry, season with salt and pepper.
  • Mix melted butter, garlic, lemon juice, Italian seasoning, and paprika.
  • Heat skillet over medium-high. Sear chicken skin-side down 5-7 mins until golden.
  • Flip chicken, brush with garlic butter, sprinkle Parmesan. Bake 15-18 mins until cooked.
  • Rest 5 mins, garnish with parsley, then serve.
