Ingredients

Dairy

  • 1 block halloumi cheese (sliced into 1/4-inch pieces)
  • 1 red bell pepper red bell pepper (sliced)
  • 1 zucchini zucchini (sliced into half-moons)
  • 1 small red onion red onion (sliced)
  • 2 tbsp olive oil (divided)
  • 1 tsp smoked paprika

  • 4 large flour tortillas
  • 0.5 cup plain Greek yogurt
  • 2 tbsp fresh dill (chopped)
  • 1 tbsp fresh mint (chopped)
  • 1 garlic clove garlic (minced)
  • 1 tbsp lemon juice

Instructions 

  • Preheat oven and roast vegetables with 1 tbsp olive oil and smoked paprika until tender.
  • While vegetables roast, slice halloumi and pan-fry until crispy.
  • Mix yogurt, dill, mint, garlic, and lemon juice to make the herb sauce.
  • Assemble wraps with roasted vegetables, crispy halloumi, and yogurt sauce, then roll up.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
