Instructions
Preheat oven to 425°F (220°C). Pat chicken dry and place in a roasting pan.
Mix paprika, garlic powder, onion powder, thyme, rosemary, salt, pepper, and olive oil to form a paste. Rub all over the chicken, including under the skin and inside the cavity. Squeeze lemon halves into cavity.
Roast for about 75 minutes until internal temperature reaches 165°F (75°C) and skin is crispy.
Let rest for 15 minutes before carving. Garnish with fresh herbs if desired.
