A delicious and easy crockpot casserole combining tender chicken, mixed vegetables, and a creamy cheese sauce for a comforting meal.

Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium breasts)
  • 4 cups mixed vegetables (e.g., broccoli florets, sliced carrots, diced bell peppers)
  • 8 oz cream cheese (softened)
  • 1 cup chicken broth (low-sodium)
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

Instructions 

  • Place chicken breasts and mixed vegetables into the crockpot.
  • In a bowl, mix cream cheese, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Pour over the ingredients in the crockpot.
  • Cook on low for 6-8 hours or until chicken is cooked through and vegetables are tender.
  • Shred the chicken in the crockpot and stir in 1 cup of shredded cheddar cheese.
  • Sprinkle remaining cheese on top and cook for an additional 10 minutes until melted. Serve hot.

Notes

For a creamier texture, add extra cream cheese or cheese at the end.
