A delicious and easy crockpot casserole combining tender chicken, mixed vegetables, and a creamy cheese sauce for a comforting meal.
Ingredients
Protein
1.5lbsboneless, skinless chicken breasts(about 3 medium breasts)
4cupsmixed vegetables(e.g., broccoli florets, sliced carrots, diced bell peppers)
8ozcream cheese(softened)
1cupchicken broth(low-sodium)
2cupsshredded cheddar cheese(divided)
1tspgarlic powder
1tsponion powder
1tspItalian seasoning
1/2tspsalt(or to taste)
1/4tspblack pepper(or to taste)
Instructions
Place chicken breasts and mixed vegetables into the crockpot.
In a bowl, mix cream cheese, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Pour over the ingredients in the crockpot.
Cook on low for 6-8 hours or until chicken is cooked through and vegetables are tender.
Shred the chicken in the crockpot and stir in 1 cup of shredded cheddar cheese.
Sprinkle remaining cheese on top and cook for an additional 10 minutes until melted. Serve hot.

For a creamier texture, add extra cream cheese or cheese at the end.
