A hearty and flavorful chili made with lean ground turkey, vegetables, and beans, perfect for a cozy meal.

Ingredients

Meat and aromatics

  • 1 tablespoon olive oil
  • 1.5 pounds 98% lean ground turkey
  • 1 cup diced yellow onion (about 1 medium)
  • 1 red pepper chopped red bell pepper
  • 2 teaspoons minced garlic (about 2 cloves)
  • 1 packet chili seasoning (1 oz packet or homemade)
  • 1 can petite diced tomatoes (14.5 oz)
  • 1 can tomato sauce (14.5 oz)
  • 1 can black beans in chili sauce (15.5 oz)
  • 1 can red kidney beans (15 oz, drained and rinsed)
  • 0.5 cup chicken broth
  • 1 cup frozen corn

Toppings

  • your favorite chili toppings (sour cream, shredded cheese, avocado, cilantro, corn chips...)

Instructions 

  • Heat olive oil in a skillet, cook ground turkey until browned, then add diced onion and red pepper, cooking for 3-4 minutes.
  • Add garlic and chili seasoning, cook for 30 seconds, then transfer mixture to a slow cooker.
  • Stir in tomatoes, tomato sauce, beans, chicken broth, and corn. Cover and cook on LOW for 6-8 hours or HIGH for 4 hours.
  • Stir well before serving and top with your favorite chili toppings.

This chili is easy to prepare in the slow cooker and perfect for meal prep or family dinners.
