Instructions
Cook pasta until al dente, then drain and set aside.
Toss chicken with seasonings, then sear in a skillet until cooked through. Remove and set aside.
Melt dairy-free butter in the same skillet, add seasonings, then stir in flour and cook briefly.
Pour in chicken broth and heavy cream, add spinach, and whisk until thickened. Stir in parmesan until melted.
Add cooked pasta and chicken, toss to coat, and thin with pasta water if needed. Serve immediately.
Notes
Use gluten-free pasta and dairy-free cheese for best results.
