These wholesome dairy-free pumpkin apple oat bars are perfect for a nutritious snack or breakfast on the go, combining fall flavors with hearty oats.

Ingredients

wet ingredients

  • 2/3 cup pumpkin puree
  • 1/2 cup pure maple syrup
  • 3/4 cup unsweetened almond butter

dry ingredients

  • 2 1/2 cups rolled oats
  • 1 tsp pumpkin spice blend
  • 1/2 tsp sea salt
  • 1 large granny smith apple, peeled, cored, and diced

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  • Mix pumpkin puree, maple syrup, and almond butter until smooth.
  • In a separate bowl, combine oats, pumpkin spice, and sea salt.
  • Fold diced apple into the wet mixture, then combine with dry ingredients.
  • Press the mixture into the prepared pan and bake for 20 minutes.
  • Allow to cool before slicing into bars and serving.
