These sweet and chewy honey oatmeal cookies are perfect for a quick treat. Packed with coconut and vanilla, they offer a delightful flavor in every bite.

Ingredients

Butter

  • 1 cup softened butter
  • 1 egg egg
  • 1 cup creamed honey (used honey)
  • 2 teaspoons vanilla extract
  • 1.5 cups sweetened shredded coconut
  • 2 cups regular flour
  • 2 cups quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream together butter and honey, then mix in egg and vanilla extract.
  • In a separate bowl, combine flour, oats, coconut, baking powder, baking soda, and salt.
  • Gradually add dry ingredients to wet mixture, mixing until combined.
  • Drop spoonfuls onto prepared baking sheets and bake for 10 minutes or until golden brown.

Notes

For softer cookies, bake a few minutes less; for crunchier, bake a bit longer.
