Ingredients

Protein

  • 2 pounds Chicken Thighs or chicken breasts

Seasoning

  • 2 tablespoons Jerk Seasoning (homemade or store-bought)
  • 2 tablespoons Soy Sauce or tamari (gluten-free option)
  • 1 tablespoon Brown Sugar (reduce for less sweetness)
  • 2 tablespoons Lime Juice (can substitute with lemon juice)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Ginger (minced)
  • 1 Scotch Bonnet or Habanero Pepper Pepper (adjust quantity for heat)

Base

  • 2 cups White Rice or brown rice, quinoa, or cauliflower rice
  • 1 cup Fresh Pineapple (diced or canned in juice)
  • 1/2 cup Red Onion (diced)
  • 1 cup Red Bell Pepper (diced)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil

Seasoning

  • to taste Salt and Pepper

Instructions 

  • Marinate chicken with jerk seasoning, soy sauce, lime juice, garlic, ginger, and pepper for 10 minutes.
  • Cook rice according to package instructions.
  • Grill or pan-fry the marinated chicken until cooked through, about 6-8 minutes per side.
  • Prepare pineapple salsa by mixing pineapple, red onion, bell pepper, and cilantro.
  • Assemble bowls with rice, sliced chicken, and pineapple salsa. Drizzle with olive oil and season with salt and pepper.

Notes

Adjust heat level by modifying the amount of Scotch Bonnet or Habanero pepper.
