Ingredients

Dough

  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg

Dry ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 0.25 tsp salt

Rolling sugar

  • 0.25 cup sugar for rolling cookies

Instructions 

  • Beat butter, sugar, and lemon zest until combined.
  • Add lemon juice and egg, then beat until smooth.
  • Mix in flour, baking soda, and salt until just combined. Refrigerate for 30-60 minutes.
  • Preheat oven to 350°F. Roll dough into balls, coat in sugar, and place on baking sheet.
  • Bake 11-13 minutes until edges are golden. Cool on rack.
