Ingredients

Meat

  • 1 pound strip steak (sliced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic (minced)
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil

Other Ingredients

  • 1 cup cooked cilantro lime rice (or Mexican rice)
  • 1/2 cup guacamole
  • 1/2 cup pico de gallo
  • 1/2 cup shredded cheddar cheese
  • 4 8-inch flour tortillas
  • to taste Fresh jalapeƱos or bell peppers (sliced)
  • to taste Fresh cilantro or green onions (chopped)
  • to taste Chipotle mayo (or lime crema)
  • as needed Nonstick cooking spray

Instructions 

  • Mix salt, pepper, garlic, lime juice, cumin, and soy sauce to create marinade.
  • Marinate steak for 30-60 minutes, then cook in a hot skillet for 5 minutes until desired doneness.
  • Warm tortillas briefly, then assemble with rice, steak, guacamole, pico de gallo, cheese, peppers, and sauce.
  • Roll the burritos and spray with nonstick spray. Grill seam-side down until golden, then flip and cook until crispy.

Notes

For extra flavor, add chopped cilantro or green onions before serving.
