A flavorful one-pan dish featuring tender chicken, caramelized Brussels sprouts, and a creamy Tuscan sauce, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 2 pieces Boneless, skinless chicken breasts or thighs

Vegetables

  • 4 cups Fresh Brussels sprouts
  • 0.5 cup Fresh baby spinach

Other ingredients

  • 0.25 cup Oil-packed sun-dried tomatoes
  • 3 cloves Freshly minced garlic
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.25 cup Freshly grated Parmesan cheese
  • 1 teaspoon Dried Italian seasoning or fresh rosemary/thyme
  • 2 tablespoons Extra virgin olive oil
  • to taste Salt
  • to taste Freshly ground black pepper

Instructions 

  • Pat chicken dry, season with salt and pepper, and halve the Brussels sprouts. Mince garlic and chop sun-dried tomatoes.
  • Sear chicken in a hot skillet with olive oil until golden and cooked through. Remove and set aside.
  • Add Brussels sprouts to the same skillet, cook until tender and caramelized. Remove and set aside.
  • Sauté garlic and sun-dried tomatoes, add chicken broth, and simmer to reduce. Stir in cream and herbs, cook until slightly thickened.
  • Return chicken and Brussels sprouts to skillet, add spinach and Parmesan, stir until wilted and sauce is creamy. Serve hot.

Notes

Use fresh herbs for a more vibrant flavor and adjust seasoning to taste.
