Instructions
Pat chicken dry, season with salt and pepper, and halve the Brussels sprouts. Mince garlic and chop sun-dried tomatoes.
Sear chicken in a hot skillet with olive oil until golden and cooked through. Remove and set aside.
Add Brussels sprouts to the same skillet, cook until tender and caramelized. Remove and set aside.
Sauté garlic and sun-dried tomatoes, add chicken broth, and simmer to reduce. Stir in cream and herbs, cook until slightly thickened.
Return chicken and Brussels sprouts to skillet, add spinach and Parmesan, stir until wilted and sauce is creamy. Serve hot.
Notes
Use fresh herbs for a more vibrant flavor and adjust seasoning to taste.
