Ingredients

Dressing

  • 2 tablespoons Dijon Mustard (Substitute with yellow mustard for milder taste.)
  • 3 tablespoons Fresh Lemon Juice (Fresh is preferred, bottled works too.)
  • 1 teaspoon Worcestershire Sauce (Or replace with soy sauce.)
  • ½ cup Mayonnaise (Greek yogurt can be used for lighter option.)
  • 1 clove Minced Garlic (Fresh is best, can use garlic powder.)
  • 1 tablespoon Anchovy Paste (Can be omitted for vegetarians.)
  • ¼ cup Grated Parmesan Cheese
  • 1 pinch Black Pepper (Opt for fresh ground for best flavor.)
  • 8 ounces Rotini or Penne Pasta (Use gluten-free pasta for gluten-free version.)

Salad

  • 2 hearts Romaine Lettuce (Chopped into bite-sized pieces.)
  • 2 cups Rotisserie Chicken (Can substitute with cooked chicken or chickpeas.)
  • 1 cup Croutons (Optional for crunch; use gluten-free if needed.)
  • ¼ cup Extra Parmesan Cheese (For garnish.)

Instructions 

  • Cook pasta according to package instructions, then drain and let cool.
  • In a bowl, whisk together Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, garlic, and anchovy paste to make the dressing.
  • In a large bowl, combine cooked pasta, chopped lettuce, shredded chicken, and croutons.
  • Pour dressing over the salad and toss to combine. Garnish with extra Parmesan cheese.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt and use less cheese.
