A flavorful and easy-to-make chicken burrito bowl perfect for a quick dinner or meal prep. Just set it and forget it!

Ingredients

Protein

  • 2-2.5 lbs skinless boneless chicken breast

Sauces and liquids

  • 16 oz chunky salsa
  • 1/3 cup BRIANNAS Cilantro Lime Dressing (plus more for drizzle)
  • 1/2 cup chicken broth

Spices

  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika

Grains and vegetables

  • 4 cups cooked rice
  • 2 cups frozen sweet corn
  • 16 oz canned black beans (low sodium)

Produce

  • 3 small avocados
  • 1/4 cup chopped cilantro
  • 1 unit lime (cut into wedges)

Instructions 

  • Add chicken, salsa, Cilantro Lime Dressing, chicken broth, chili powder, cumin, and smoked paprika to slow cooker. Set on high and cook for 4 hours.
  • Shred chicken and cook for 10 more minutes. Prepare rice, corn, beans, and produce.
  • Assemble bowls with rice, chicken, corn, black beans, and avocados. Garnish with cilantro and lime, drizzle with dressing.
  • Serve and enjoy!

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
