Ingredients

Salmon

  • 1 lb Salmon fillet (cut into strips)

Butter

  • 4 tablespoons Unsalted butter (softened)

Herbs

  • 2 tablespoons Fresh dill (chopped)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Garlic powder

Salt

  • to taste Salt

Black pepper

  • to taste Black pepper

Rice

  • 1 cup Long-grain rice
  • 2 cups Chicken or vegetable broth

Other ingredients for rice

  • 1 tablespoon Olive oil
  • 1 small onion (finely chopped)
  • 1 clove Garlic (minced)
  • 1 lemon Lemon zest (from 1 lemon)

Garnish

  • optional Fresh parsley (for garnish)

Instructions 

  • Cook rice in broth with onion, garlic, and lemon zest until tender, about 20 minutes.
  • Meanwhile, season salmon strips with dill, lemon juice, garlic powder, salt, and pepper.
  • In a skillet, melt butter with olive oil and cook salmon until golden and cooked through, about 5-7 minutes.
  • Fluff rice and serve topped with salmon strips, garnished with parsley if desired.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
