A fresh and flavorful salad combining white beans, crisp cucumbers, radishes, and dill, dressed in a tangy lemon vinaigrette.

Ingredients

Dressing

  • 1 clove garlic (minced)
  • 2 tablespoons lemon juice (about 2 tablespoons of juice from 1 small lemon)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • to taste black pepper Black pepper

Salad

  • 2 15-ounce cans white beans (rinsed and drained)
  • 2 cucumbers Persian cucumbers (thinly sliced) (or 1/2 a large cucumber)
  • 5-7 radishes radishes (cut into matchsticks)
  • 0.75 oz fresh dill (stems removed and finely chopped)
  • 2 green onions green onions (thinly sliced) (green and white parts)

Instructions 

  • Whisk garlic, lemon juice, oil, mustard, salt, and pepper in a small bowl; set aside for 5 minutes.
  • Combine beans, cucumber, radishes, dill, and green onions in a large bowl. Add dressing and toss to combine.
  • Serve immediately or chill for 15-30 minutes to enhance flavors. Leftovers keep up to 5 days.
