Ingredients

Dry ingredients

  • 3/4 cup gluten-free all purpose flour or regular flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened coconut oil or dairy-free butter alternative
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1 1/4 cup rolled oats certified gluten-free
  • 3/4 cup chocolate chips dairy-free if necessary

Instructions 

  • Beat butter, brown sugar, and white sugar until creamy, then add vanilla and egg, blending briefly.
  • Sift dry ingredients over the wet mixture using a fine mesh strainer, then stir until smooth.
  • Fold in oats and chocolate chips, then let the dough rest.
  • Preheat oven to 350°F (175°C), line pans with parchment, and scoop dough onto pans, flattening slightly.
  • Bake for 9-11 minutes until edges are set but centers are slightly underdone. Cool and enjoy!

Notes

For extra flavor, add a pinch of cinnamon or espresso powder.
