Ingredients
Brining
0.25cuptable salt(for brining)
0.25cupsugar(for brining)
Salmon Fillets
4piecesskin-on salmon fillets(6-8 ounces each)
Glaze
0.33cupapple cider
3tablespoonscider vinegar
2tablespoonssugar
4teaspoonssoy sauce
1.5teaspoonscornstarch
Ginger
1inchginger(peeled and lightly smashed)
0.5teaspoonvegetable oil
Herbs
1tablespoonminced fresh parsley or chives
Instructions
Brine the salmon fillets in a salt and sugar solution for 15 minutes, then pat dry.
Combine cider, vinegar, sugar, soy sauce, and cornstarch; simmer with ginger until thickened, then steep for 5 minutes. Remove ginger and set aside 2 tbsp glaze.
Cook salmon fillets skin-side down in a hot skillet until browned, then flip and brush with glaze. Finish in oven at 300°F for 10-15 minutes until medium-rare.
Brush remaining glaze on fillets, sprinkle with herbs, and serve.
