Ingredients

Dry ingredients

  • 1 cup rolled oats (gluten-free if needed)
  • 0.5 cup vanilla protein powder (plant-based or whey)
  • 1.5 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

Wet ingredients

  • 1 egg egg
  • 0.5 cup unsweetened applesauce
  • 0.75 cup almond milk or milk of choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Optional mix-ins

  • 0.25 cup chocolate chips, blueberries, or chopped nuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and grease muffin tin or silicone molds.
  • Blend oats, protein powder, baking powder, cinnamon, and salt until finely ground.
  • Add egg, applesauce, almond milk, maple syrup, and vanilla; blend until smooth.
  • Stir in optional mix-ins like chocolate chips or nuts.
  • Divide batter into 6 muffin cups and bake for 18-22 minutes until a toothpick comes out clean.
  • Cool for 5-10 minutes, then serve warm or cold.
