Instructions
Heat a large pot over medium-high heat, add olive oil, and sauté onions, green peppers, and red peppers until soft.
Add minced garlic and cook for 1 minute, then add ground beef, breaking it apart and cooking until browned.
Stir in chili spices, tomato paste, broth, beans, corn, diced tomatoes, and cubed squash. Cover and simmer for 35-40 minutes until squash is tender.
Adjust seasoning with salt, pepper, and optional cayenne. Serve hot.
Notes
You can use pre-cooked squash to reduce simmer time to 15-20 minutes.
