Ingredients

Protein

  • 450 g cooked chicken breast, shredded
  • 60 g toasted pecans, roughly chopped
  • 1 large Granny Smith apple, diced
  • 2 stalks celery, finely diced
  • 30 g dried cranberries
  • 15 ml fresh lemon juice
  • 120 g mayonnaise
  • 15 g Dijon mustard
  • 10 ml honey
  • 5 g fresh tarragon or chives, minced
  • to taste Salt and black pepper
  • 8 slices sourdough or multigrain bread
  • 1 head Bibb or butter lettuce

Instructions 

  • Dice the apple into 0.5 cm pieces and toss with lemon juice to prevent browning.
  • Toast pecans in a dry skillet over medium heat for 3 minutes until fragrant.
  • Mix mayonnaise, mustard, honey, salt, and pepper until smooth.
  • Combine chicken, cranberries, celery, pecans, apples, and dressing; fold gently.
  • Toast bread slices; assemble sandwiches with lettuce and chicken mixture.
