Ingredients

Protein

  • 2 lbs Boneless, skinless chicken breasts (choose fresh or thawed)
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • to taste Salt
  • to taste Pepper

Grains

  • 1 cup Quinoa (rinsed well)
  • 2 cups Low-sodium chicken broth

Vegetables & Fruits

  • 2 tablespoons Fresh lemon juice
  • 1 cup Cherry tomatoes (sliced)
  • 1 cup Cucumber (sliced)
  • 1 large Avocado (sliced)
  • 1/4 cup Fresh parsley or cilantro (chopped)

Dressing

  • 1/4 cup Extra virgin olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Honey

Additional

  • to taste Salt
  • to taste Pepper

Instructions 

  • Season chicken with garlic powder, smoked paprika, salt, and pepper. Cook until tender and set aside.
  • Cook quinoa in chicken broth until fluffy, then let it cool slightly.
  • Prepare dressing by whisking together lemon juice, olive oil, balsamic vinegar, Dijon mustard, and honey.
  • Slice cooked chicken, tomatoes, cucumber, and avocado. Assemble bowls with quinoa, chicken, vegetables, and herbs. Drizzle with dressing and top with feta if desired.

Notes

For extra flavor, marinate the chicken with spices before cooking.
