Instructions
Preheat oven to 350°F (175°C). Sear seasoned chicken thighs in a skillet until golden, then set aside.
Cook diced onion, carrots, and celery in the same pan until softened, then add garlic, thyme, and rosemary.
Stir in broth, heavy cream, Parmesan, and rice. Nestle chicken on top, cover, and bake for 40-50 minutes.
Broil for 1-2 minutes to crisp chicken skin. Garnish with parsley and serve.
