A comforting one-pan dish combining tender chicken, flavorful rice, and creamy sauce, baked to perfection.

Ingredients

  • 2 tablespoons olive oil
  • 2 lbs bone in, skin on chicken thighs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 yellow onion diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • 1/2 teaspoon dried rosemary
  • 1.5 cups basmati & wild rice blend (Della brand)
  • 3 cups chicken broth
  • 8 oz heavy cream
  • 1/2 cup shredded Parmesan
  • to taste Kosher salt
  • to taste fresh cracked pepper

Instructions 

  • Preheat oven to 350°F (175°C). Sear seasoned chicken thighs in a skillet until golden, then set aside.
  • Cook diced onion, carrots, and celery in the same pan until softened, then add garlic, thyme, and rosemary.
  • Stir in broth, heavy cream, Parmesan, and rice. Nestle chicken on top, cover, and bake for 40-50 minutes.
  • Broil for 1-2 minutes to crisp chicken skin. Garnish with parsley and serve.

Notes

Ensure rice is fully cooked before serving for best texture.
