A hearty and flavorful soup perfect for a quick weeknight dinner, combining tender chicken with vibrant spices and vegetables.

Ingredients

olive oil

  • 2 Tablespoons olive oil

vegetables

  • 1/2 medium red onion
  • 1 Tablespoon minced garlic
  • 1 medium red bell pepper

liquid ingredients

  • 3 cups low-sodium chicken broth
  • 1 15-ounce can tomatoes & green chilies
  • 1 15-ounce can black beans
  • 1 cup frozen corn

spices

  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoons brown sugar

dairy

  • 1/2 cup Greek yogurt

protein

  • 2 1/2 cups shredded cooked chicken
  • 1 Tablespoon lime juice

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped red onion, bell pepper, and garlic until tender.
  • Add chicken broth, tomatoes with chilies, black beans, corn, and spices. Simmer for 15 minutes.
  • Stir in shredded chicken and cook for another 5 minutes. Remove from heat.
  • Serve topped with Greek yogurt and a squeeze of lime juice.

Notes

For extra flavor, garnish with fresh cilantro or shredded cheese.
