A comforting and cheesy casserole combining tender chicken, rice, and creamy Alfredo sauce, perfect for a quick family dinner.

Ingredients

Protein

  • 2 cups cooked chicken (shredded or chopped)

Grains

  • 1.5 cups uncooked white rice

Sauces and Broths

  • 2 cups Alfredo sauce
  • 2 cups chicken broth (low-sodium recommended)

Dairy & Cheese

  • 1 cup shredded mozzarella or a mix of mozzarella and Parmesan

Vegetables & Aromatics

  • 3 cloves garlic, minced
  • 0.5 cup finely chopped onion

Fats & Oils

  • 2 tablespoons butter (28g)

Seasonings & Extras

  • to taste Salt and pepper
  • optional fresh parsley for garnish
  • optional pinch of red pepper flakes

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
  • Melt butter in a skillet, cook garlic and onions until translucent, about 3-5 minutes.
  • Mix Alfredo sauce, chicken broth, salt, and pepper in a bowl. Whisk until smooth.
  • Stir in uncooked rice and chicken, then pour into dish. Top with cheese.
  • Cover with foil, bake 50 minutes. Remove foil, bake 10 more minutes until bubbly. Rest 10 minutes before serving. Garnish with parsley if desired.

Notes

For extra flavor, add red pepper flakes or fresh herbs.
