  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 1/4 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken, season with salt, pepper, and Italian seasoning. Cook until browned, about 5-7 minutes.
  • Add garlic and sun-dried tomatoes; cook for 1 minute.
  • Pour in heavy cream, stir in Parmesan, and simmer until sauce thickens.
  • Add spinach and cook until wilted, about 1-2 minutes. Season with red pepper flakes if desired. Serve immediately.

Notes

For a lighter version, use half-and-half instead of heavy cream.
