Ingredients

Protein

  • 4 fillets Fresh white fish flaky varieties like cod or tilapia
  • 3 cloves Garlic finely minced
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Long-grain white rice
  • 2 cups Chicken or vegetable broth for deeper flavor
  • 1/4 cup Fresh parsley chopped (optional)
  • 1/4 cup Grated Parmesan cheese (optional)
  • 1 teaspoon Red pepper flakes (optional)

Optional

  • 1/4 cup Finely chopped onion (optional)

Instructions 

  • Cook rice in broth until tender, about 15 minutes.
  • Meanwhile, season fish with salt, pepper, and optional red pepper flakes.
  • In a skillet, melt butter and cook garlic until fragrant, then add fish and cook until flaky, about 4-5 minutes per side.
  • Fluff rice, then stir in parsley, Parmesan, and optional onion.
  • Serve fish over rice, drizzled with garlic butter sauce.
