A quick and flavorful pasta dish featuring tender chicken, garlic, spinach, and Parmesan cheese, perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into bite-sized pieces)

Pasta

  • 2 cups penne pasta (whole wheat for extra health!)

Sauce & Flavorings

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup low-fat cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning

Garnish

  • Fresh parsley (chopped (for garnish))
  • Optional N/A Red pepper flakes (for a kick)

Instructions 

  • Cook the penne pasta until al dente and set aside.
  • Sauté chicken in olive oil until golden and cooked through.
  • Add garlic and cook until fragrant.
  • Reduce heat, add cream cheese and milk, stirring until smooth.
  • Mix in spinach, cooked pasta, Parmesan, and seasonings. Serve garnished with parsley.

Notes

For extra flavor, sprinkle red pepper flakes before serving.
