A flavorful and easy-to-make Greek-inspired roast chicken with lemon, garlic, and potatoes, perfect for a hearty meal.

Instructions
Preheat oven to 400°F (200°C). Mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl.
Rub the mixture all over the chicken and place it in a roasting pan with potatoes around it. Pour remaining marinade over potatoes.
Roast in the oven for about 1 hour and 15 minutes, until internal temperature reaches 165°F (75°C).
Let the chicken rest for 10 minutes, then carve. Garnish with fresh parsley and serve.
Notes
For extra flavor, marinate the chicken for a few hours before roasting.
