Instructions
Preheat oven to 350°F (175°C). Lightly coat a muffin tin with cooking spray or olive oil.
Heat olive oil in a skillet over medium heat, sauté onions and bell peppers until tender, about 3-4 minutes.
Whisk eggs with salt and pepper until frothy, then fold in sautéed vegetables and spinach.
Pour mixture into muffin tin, filling each about three-quarters full, then sprinkle cheese on top.
