Ingredients

  • 2 pieces lemons (zested and juiced)
  • ¼ cup extra virgin olive oil
  • 5 cloves garlic, crushed or minced
  • teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup chopped Italian parsley, plus more for garnish
  • 2 pounds boneless, skinless chicken breasts (about 4 large)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil (for cooking)

Instructions 

  • Zest and juice the lemons, then whisk with olive oil, garlic, Italian seasoning, red pepper flakes, and parsley to make the marinade.
  • Pat chicken dry, then season with salt and black pepper.
  • Marinate chicken for 20 minutes or cook immediately.
  • Heat a skillet with 1 tablespoon olive oil, then cook chicken 6–7 minutes per side until golden and cooked through.
  • Pour pan juices over chicken, garnish with parsley, and serve.

Notes

Use fresh parsley for the best flavor and adjust red pepper flakes to taste.
