Delicious and nutritious lemon-flavored protein bars perfect for a quick snack or post-workout boost.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder ((or unflavored))
  • 1/4 cup coconut flour
  • 2 tablespoons chia seeds ((optional))
  • 1/4 teaspoon salt

Wet ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey ((or maple syrup))
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Instructions 

  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients until smooth.
  • Combine wet and dry, stir into a sticky dough.
  • Press mixture into an 8x8-inch pan lined with parchment.
  • Refrigerate for 1-2 hours until firm, then cut into 6 bars.
