Ingredients

  • 1 cup Red Lentils (Rinsed until water runs clear)

Vegetables

  • 4 cups Fresh Spinach (Added in batches)

Aromatics

  • 1 medium Onion (Finely chopped)
  • 3 cloves Garlic (Minced)
  • 1 inch Ginger (Grated)

Spices

  • 1 teaspoon Cumin Seeds (Toasted)
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Garam Masala
  • 1 teaspoon Red Chili Powder (Adjust according to spice level)
  • 1 teaspoon Salt (To taste)

Canned Goods

  • 1 can Coconut Milk

Liquids

  • 2 cups Vegetable Broth or Water
  • 1 tablespoon Fresh Lemon Juice (For brightness)
  • ¼ cup Fresh Cilantro (Chopped for garnish)

Instructions 

  • Toast cumin seeds in a dry pan until fragrant, then set aside.
  • In a pot, sauté chopped onions, garlic, and ginger until translucent.
  • Add spices and cook for 1 minute to release their aroma.
  • Stir in lentils, coconut milk, and vegetable broth; bring to a boil.
  • Reduce heat, add spinach in batches, and simmer until lentils are tender. Finish with lemon juice and garnish with cilantro.

Notes
