A delicious and wholesome chicken bowl featuring roasted sweet potatoes, glazed with maple Dijon sauce, topped with nuts and fresh herbs.
Ingredients
Sweet Potatoes
2cupssweet potatoes (peeled, cut into 1-inch cubes)(optional peel)
2tbspolive oil(divided)
1tspsmoked paprika
to tastesalt
to tastepepper
1/3cupmaple syrup
3tbspDijon mustard
2clovesgarlic (minced)
1tbspfresh thyme (chopped)
4pieceschicken thighs (bone-in, skin-on)
to tastetoasted pecans or pumpkin seeds(optional toppings)
to tastefresh thyme leaves(optional garnish)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast on one side for 15 minutes.
Mix maple syrup, Dijon, garlic, remaining olive oil, thyme, salt, and pepper to make marinade.
Brush chicken with half the marinade, place on baking sheet, and roast for 15 minutes. Flip, brush with remaining marinade, and roast another 10-15 minutes.
Serve chicken and sweet potatoes in bowls, top with nuts, drizzle extra maple syrup, and garnish with thyme leaves.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of fresh herbs before serving.
