A delicious and wholesome chicken bowl featuring roasted sweet potatoes, glazed with maple Dijon sauce, topped with nuts and fresh herbs.

Ingredients

Sweet Potatoes

  • 2 cups sweet potatoes (peeled, cut into 1-inch cubes) (optional peel)
  • 2 tbsp olive oil (divided)
  • 1 tsp smoked paprika
  • to taste salt
  • to taste pepper
  • 1/3 cup maple syrup
  • 3 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1 tbsp fresh thyme (chopped)
  • 4 pieces chicken thighs (bone-in, skin-on)
  • to taste toasted pecans or pumpkin seeds (optional toppings)
  • to taste fresh thyme leaves (optional garnish)

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • Toss sweet potatoes with 1 tbsp olive oil, paprika, salt, and pepper. Roast on one side for 15 minutes.
  • Mix maple syrup, Dijon, garlic, remaining olive oil, thyme, salt, and pepper to make marinade.
  • Brush chicken with half the marinade, place on baking sheet, and roast for 15 minutes. Flip, brush with remaining marinade, and roast another 10-15 minutes.
  • Serve chicken and sweet potatoes in bowls, top with nuts, drizzle extra maple syrup, and garnish with thyme leaves.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of fresh herbs before serving.
